Harry Einstein created the Parkyakarkus prototype as a boy, mimicking the Greeks who frequented his father's importing warehouse. He entertained at club functions and in 1932 began appearing regularly on a Boston radio station. Eddie Cantor caught his act in 1934, and Einstein was soon nationally known through his appearances on The Eddie Cantor Show. He also appeared with Al Jolson in 1938.

Meet Me at Parkey's was largely self-written, featuring Einstein as chief cook and bottle washer of a Greek beanery. At the end of the NBC run, Einstein underwent spinal surgery to relieve chronic back pain. But this left him mostly paralyzed, a condition he struggled for years to overcome.
